Fitzbillies is a craft baker and confectioner, based at 52 Trumpington Street, Cambridge CB2 1RG, England. Founded in 1922 by the Mason brothers, it is famous for its Chelsea buns, fruit cakes, and sponges. Subsequent owners have safeguarded the secret recipes, particularly that for Chelsea buns. These can reasonably claim to be the stickiest and most delicious in the world.

The original Fitzbillies Chelsea Bun has been its most popular product for eighty years. It is rich, spicy, and syrupy and travels well.
