ABOUT 'L ROBSON & SONS'

L Robson & Sons is a fourth generation family business based at Haven Hill, Caster, Alnwick, Northumberland NE66 3TR, England. It smokes kippers and salmon, using traditional methods, in the original smokehouses which are more than 130 years old.

To produce kippers, plump herring are split on a machine capable of splitting 500kg per hour, replacing the numerous Herring Girls that used to split the herring by hand. The herring are then placed in a brine solution of plain salt and water. They are then hung on tenter hooks and placed in the large somehouses. Fires are placed under the rows of herring, made of whitewood shavings and oak sawdust. These smoulder for up to sixteen hours befre the kippers are ready.
