ABOUT 'HALEN MON'

Halen Mon is the brand name of the sea salt produced by the Anglesey Sea Salt Company, of Brynsiencyn, Isle of Anglesey, Wales LL61 6TQ. Halen Mon salt has Soil Association Certified Product Status, and is available for sale online. The Halen Mon salt making process begins with charcoal-filtered sea water drawn from the Menai Straits which separate the Isle of Anglesey from the mainland of Wales. The sea water has already passed through two natural filters: a mussel bed, and a sandbank which ensures no fish or seaweed are unwittingly trapped.

The filtered sea water is heated gently in a vacuum, which enables it to almost boil at low temperature. This turns the sea water into a very salty brine, which is released into shallow crystallisation tanks. During the quiet of the night, delicate crystals begin to form; firstly on the surface, then sinking as they grow. The salt is harvested in the morning, being scooped gently from the shallow tanks.

Because Halen Mon sea salt comes from the living sea, rather than from mined deposits, it contains many trace elements including gold, silver, zinc, magnesium, calcium and iodine. These elements contribute to health and to flavour. In wine terms, sea salt has a 'terroir', with different seas producing different flavours.
